‘Cod’ you pass the Pistachios Please?

Pistachio crusted Wild Pacific Cod. Sounds fancy right? It’s really not. It’s just frozen cod from Costco and some pistachios from the pantry that I have been needing to use up so I can buy a fresh bag. Bottom line is this recipe is easy. It is healthy. And it sounds super fancy so you can totally impress your family/friends.

Start by thawing your filet pieces.

Shell your pistachios. Or you can buy them pre-shelled if anyone in your life has ever used the word “moneybags” to describe you. Also, if you have a three year old, try to shell faster than she eats.

Now you need some breadcrumbs. I prefer to just get a slice of whole wheat bread and toast it. Besides, have you ever looked at the ingredients on the back of a cardboard box of breadcrumbs? No thanks.

Put your toasted bread and pistachios into a food processor and pulse until it looks kinda like this.

Thoroughly dry your thawed pieces of cod. Sprinkle with salt and pepper. Brush generously with stone ground mustard, or dijon, and top heap with the breadcrumb/pistachio mixture. Place into a well greased baking dish.

Bake at 425 degrees for 20 minutes, or until the cod flakes apart with a fork.

Now you can make your 18 month old do the dishes…. But really, wouldn’t that be nice?

Ingredients:

  • 3-4  Cod filets
  • 1/3 cup of shelled pistachios.
  • 1 slice of toasted bread I used whole wheat but any variety can work.
  • 3-4 tablespoons of stone ground or dijon mustard.
  • salt and pepper
  • bake at 425 degrees for 20 minutes (you know it’s don’t when the fish flakes with a fork)
